Plum cake (Blomme kage) september 2, 2008

2 Tablespoons Currant or Seedless Raspberry Jam
3 Tablespoons Brandy
1 Pound (10-12) Italian Prune Plums, halved and pitted
3/4 Cup Unbleached Flour, plus extra for dusting the pan
3/4 Cup Sugar
1/3 Cup Slivered Almonds
1/2 Teaspoon Baking Powder
1/4 Teaspoon Salt
6 Tablespoons Unsalted Butter, cut into 6 pieces, softened but still cool
1 Large Egg, Plus
1 Large Yolk, room temperature
1 Teaspoon Vanilla
¼ Teaspoon Almond

ExtractPowdered Sugar, for serving

Cook jam and brandy in 10 inch nonstick skillet over medium heat until reduced to thick syrup, 2 to 3 minutes. Remove skillet from heat and place plums cut-side down in syrup. Return skillet to medium heat and cook until plums shed their juices and thick syrup is again formed, about 5 minutes, shaking pan to prevent plums from sticking.

Cool plums in pan, about 20 minutes.Adjust oven rack to middle position and heat oven to 350 degrees. Grease and flour 9 inch springform pan. Process sugar and almonds in food processor until nuts are finely ground, about 1 minute. Add flour baking powder, and salt; pulse to combine. Add butter and pulse until mixture resembles coarse sand, about ten 1 second pulses.

Add eggs, vanilla, and almond extract and process until smooth, about 5 seconds, scraping bowl once if needed (batter will be very thick and heavy)Transfer batter to prepared pan; using spatula, spread batter evenly to pan edges and smooth surface. Stir plums to coat with syrup. Arrange plum halves, skin-side down, evenly over surface of batter (pack with fruit, place over entire surface of batter and not touching pan edges).

Bake until cake is golden brown and wooden skewer inserted into center comes out with few crumbs attached, 40-50 minutes. Run paring knife around sides of cake to loosen. Cool in pan on wire rack until just warm or to room temperature, at least 30 minutes. Remove cake from pan and dust with powdered sugar. Cut into wedges and serve.

 

Plum tatin september 1, 2008

¾ Stick Unsalted Butter (6 Tablespoons), at room temperature
8-10 Plums, cut in half and pitted
1/3 Cup Water
1 ½ Cups Sugar, divided
2 Eggs
1/3 Cup Sour Cream
1 Teaspoon Vanilla
1 ¼ Cups Flour
½ Teaspoon Baking Powder
½ Teaspoon Salt
Coat glass pie plate with non-stick cooking spray and spread plums cut side down on bottom of dish.Combine water and 1 cup of the sugar in small saucepan, cook over high heat until light amber in color (360 degrees on candy thermometer), do not stir. Pour over the plums.
Cream butter and remaining ½ cups sugar over medium speed until light and fluffy.
Add eggs one at a time and beat over low until just combined. Next add sour cream and vanilla, beat on medium speed until combined.Add Flour, baking powder and salt, beat on low until just combined, do not over-mix.
Spread cake batter evenly over plums and place into pre-heated 350 degree oven.
Bake for 30-40 minutes until toothpick inserted into center of cake comes out clean. Cool 20 minutes, then invert onto serving plate.

Jordbær – kiwi salat august 23, 2008

De sidste sommer jordbær og dejlig frisk kiwi.
Skær det hele i skiver og anret i en dyp tallerken.

Passer også som en lille børne snack.

2 kilo æbler

5 dl vand

2 – 4 dl sukker

Saft af 1 citron

Evt. lidt vanilie

Kog æbler og vand under låg til æblerne er helt kogt ud. Det tager cirka 10 minutter. Rør i æblegrøden til den er jævn. Bland sukker, citronsaft og vanilje i.
Hvis du skal gemme æblegrøden i et glas, så hæld 2 tsk. Atamon i mosen. Hvis I spiser den med det samme, eller fryser den, så er der ikke grund til at bruge konserverings-midler.
Spis æblemosen kold eller varm med mælk.

bund:
180 g hvetemel
50 g sukker
100 g smør
1 stk. egg
1 ss vann

fyld/pynt:
3 dl kremfløte
3 dl ferdig vaniljekrem (evt. posekrem)
5 dl jordbær

Ha hvetemel, sukker, smør i tynne skiver (bruk en ostehøvel) egg og vann i en food-processor og kjør deigen i ca. 10 – 15 sekunder til den får en finkornet konsistens.

Får du den ikke samlet må du tilsette litt mer vann. Elt deigen godt og form den til en rund leiv. Legg deigen i en plastpose og la den hvile i kjøleskapet ca. en time.

Kjevle ut deigen og legg den i formen. Renskjær kanten. Prikk bunnen med en gaffel.
La paibunnen hvile i kjøleskapet i ca. 15 minutter, og stek den i stekeovnen ved 200 grader i ca. 15 minutter.

Avkjøl paibunnen før det tas forsiktig ut av formen.

Visp fløten til luftig krem og bland den med vaniljekrem. Hell kremblandingen i paiskallet. Kutt jordbær i skiver og pynt paien.

 

Sandwich med jordbær juni 21, 2008

8 skiver groft rugbrød
12 store jordbær
Rucolasalat
Sort sesam
100 g Philadelphia, neutral
½ tsk. stødt kanel (uden sukker)

Skyl jordbærrene og nip blomsten af. Skær dem i skiver på den lange led. Rist rugbrødsskiverne, evt. på grillpande og lad dem køle af.

Rør Philadelphia med kanel og smør et tykt lag på en skive rugbrød. Taglæg herefter de skiveskårede jordbær ovenpå, pynt med rucola og drys med lidt sort sesam. Afslut med en skive grillet rugbrød på toppen.

Del evt. sandwichen i 4 og sæt stykkerne på en bambuspind, det syntes børnene er sjovt.

8 slices of danish grilled rye bread
12 big strawberriesrucola salad
100 grams ricotta
Black sesam
1/2 tbspoon cinnamon and mix it with the ricotta cheese

Æblekage

500 g mel
170 g sukker
2 dl fromage frais
1 tsk vanille
1 spsk bagepulver
3 Æbler
Æg til pensling

Revet æble blandes sammen med vanille og sukker.Tilsæt fromage frais.

Mel og bagepulver blandes og tilsættes dejen. Dejen æltes og ca. 2/3 lægges i en kageform på ca. 15 x 25 cm.

Skær to æbler i skiver, dyp dem evt. i sukker, og læg dem på dejen.

Den sidste del af dejen rulles ud og skæres i strimler på ca. 1,5 cm. Flet dem hen over æblerne og pensel med æg.

Bages 30-35 minutter ved 200°.

 

Jordbær med appelsingranita juni 20, 2008

Saft af 6 appelsiner
800 g jordbær
4 yoghurt naturel
Sukker efter smag og behag
Vælg nogle friske appelsiner.
Pres dem og hæld saften i en skål. Dæk skålen til med film og stil den i fryseren. Dette kan gøres dagen før.
Vask jordbærrene hurtigt under rindende vand og lad dem dryppe af.
Tag en skarp kniv (pas på ikke at skære dig) og fjern stilken og eventuelle stødpletter.
Pisk yoghurten med en gaffel eller ske, indtil den er jævn og glat, og tilsæt sukker efter smag og behag. Fordel yoghurten i fire portionsskåle. Pynt med jordbærrene. Skær dem i mindre stykker, hvis de er for store.
Dæk skålene til og stil dem i fryseren indtil serveringen. Alt dette kan gøres dagen i forvejen.
Lige inden serveringen tager du en ske eller gaffel og rører op i overfladen af den frosne appelsinsaft, så den bliver til granita. Kom appelsingranita i hver af portionsskålene.
 

Pineapple ice cream juni 6, 2008

6 orange drinks
1 (#2) can crushed pineapple
1 can Eagle Brand milk
3/4 c. sugar1 sm. can Carnation milk

Mix ingredients well and freeze in ice cream freezer.

 

Fresh strawberry cupcakes juni 4, 2008

1 3/4 c all-purpose flour
1 t baking soda
1 c sugar
1/2 c chopped walnuts
2 eggs
1/2 c vegetable oil
1/2 t almond or vanilla extract
1 cup (10 oz) crushed fresh strawberries mixed with 3 T sugar.
Mix together flour, baking soda, sugar and nuts in a bowl. In another bowl, beat together eggs, flavoring and oil until well blended.
Add strawberries and beat at slow speed of mixer until berries are partially broken. Beat in flour mixture slowly until smooth, but pieces of berries are still visible. Pour batter into greased muffin tins, filling to half. Bake at 350 deg F for 30 minutes, or until they test done. Or, bake in greased 9x5x3″ loaf pan for at 350 deg F for 1 hour, or until done.
