Basic Chicken Stock september 18, 2007

305 g chicken parts
2/3 large onion
2 stalks celery, including some leaves
2/3 large carrot
6 g salt
2 whole cloves
950 ml water
40 ml cold water (optional)
2/3 egg

Quarter onion. Chop scrubbed celery and carrot into 1 inch chunks. Place chicken pieces, onion, celery, carrot, salt, and cloves in large soup pot or Dutch oven. Add 6 cups water. Bring to a boil. Reduce heat, cover, and simmer for 1 hour.

Remove chicken and vegetables. Strain stock. Skim fat off the surface.
To clarify stock for clear soup, removing solid flecks that are too small to be strained out with cheesecloth, follow this method. Separate the egg white from the egg yolk, and reserve the shell. In a small bowl, combine 1/4 cup cold water, egg white, and crushed eggshell. Add to strained stock, and bring to a boil. Remove from heat, and let stand 5 minutes. Strain again through a sieve lined with cheesecloth.

Til 4-5 x 1 dl. Hver portion rækker som udgangspunkt for sauce til 4-6 personer.

3 kg okse ben, skåret i 6-10 stykker
1 dl olivenolie
150 g porrer
200 g gulerødder
150 g persillerod
250 g pastinak
50 g persillekviste
200 g løg (med skal)
1 spsk peberkorn
2 spsk tørrede korianderfrø
1 spsk tomatpuré
(evt. 1 Parmesanskorpe)
3 spsk timian
2 laurbærblade
5 l vand
1 spsk Maldonsalt

Benene brunes i en 200º varm ovn til de er godt brune (tager 3-4 kvarter).
Urterne skrælles og skæres i grove stykker.
Urterne brunes i en stor gryde i olien.
De brunede ben tilsættes sammen med resten (tilsæt evt. mere vand til det dækker).
Koges ved middel varme 4-6 timer til brusken er opløst – skum jævnligt.
Alt fyld tages op med en hulske og smides væk.

Resten sigtes gennem et oste klæde (evt. et viskestykke) i spidssigte.
Koges ind til ca. 1/2 liter. Det tager ca. 1 time – pas på! Det går stærkt til sidst.
Kommes i 4-5 bægre og kan fryses ned.
