150g bacon
250g cocktailpølser
1 dl fløde
100g champignoner

Cedar Plank Grilled Salmon september 23, 2007
1 red pepper
1 small onion
16 stalks asparagus
2 large mushrooms
Cooking spray
1 tsp Mrs. Dash Garlic and Herb Seasoning
2 pounds salmon filets, boneless skinless
1 tsp coarse salt
1 tsp Mrs.Dash Original Seasoning
1 tsp rosemary leaves
1/2 cup grainy Dijon mustard
2 tbsp brown sugar
Squirt bottle of water
2 tbsp olive oil
1 tbsp balsamic vinegar
1 loaf foccacia bread
Cut pepper and onion into large chunks, heaping into center of veggie basket as you cut.
Snap off bottom node of each asparagus stalk and discard.
Spray veggies with cooking spray, sprinkle with spice and place on lower rack of BBQ.
Rinse the salmon thoroughly under water, then pat dry with a paper towel. On one side only, smear salmon with the salt, spices and mustard then sprinkle on the brown sugar.
Place the presoaked plank on the grill. Close the lid for a few minutes but keep checking until you see smoke.
Move the veggies to the top rack or on one side of the BBQ with reduced heat. Toss often.
The salmon will be ready when it flakes off easily with a fork (approx 10-15 minutes).
Squirt the edges of the board if they catch on fire. You will have to keep lifting the lid to check.
Drizzle olive oil and vinegar in a small bowl for dipping.
Roasted Garlic, Feta and Walnut Dip, Toasted Flat Bread
Basic Chicken Stock september 18, 2007
305 g chicken parts
2/3 large onion
2 stalks celery, including some leaves
2/3 large carrot
6 g salt
2 whole cloves
950 ml water
40 ml cold water (optional)
2/3 egg
Quarter onion. Chop scrubbed celery and carrot into 1 inch chunks. Place chicken pieces, onion, celery, carrot, salt, and cloves in large soup pot or Dutch oven. Add 6 cups water. Bring to a boil. Reduce heat, cover, and simmer for 1 hour.
Remove chicken and vegetables. Strain stock. Skim fat off the surface.
To clarify stock for clear soup, removing solid flecks that are too small to be strained out with cheesecloth, follow this method. Separate the egg white from the egg yolk, and reserve the shell. In a small bowl, combine 1/4 cup cold water, egg white, and crushed eggshell. Add to strained stock, and bring to a boil. Remove from heat, and let stand 5 minutes. Strain again through a sieve lined with cheesecloth.
Fondue med Abrikos
50 gr. Mandler
10 gr. Smør
1 dl. Fløde
2 Plader letbitter chokolade
1 Plade flødechokolade
2 spsk. Abrikoslikør
Mandlerne skoldes og hakkes fint og ristes let. Fløden hældes forsigtigt ved, og den knuste chokolade smeltes under svag varme. Abrikoslikør tilsættes, og alt hældes over i fonduegryden. Der dyppes med halve abrikoser, jordbær, meloner, druer eller nødder. Abrikoslikør og kaffe drikkes til.
